Three Crews, One Body

Food shows up as three crews with three different jobs — fuel, builders, and long-burning materials — plus a helper crew so small you could hide it under a grain of rice. No single food carries all of it, which is why variety is the whole strategy.
🍋The Test That Started It All
In May 1747, a Scottish ship’s surgeon named James Lind stopped arguing about which cure worked and ran a test instead. Twelve sailors on HMS Salisbury, all worn out by the same shipboard illness. Same food for all twelve — then he changed exactly one thing between six pairs.

Nobody could explain it yet. The word “vitamin” was not invented until 1912 — 165 years later — and vitamin C itself was not identified until the 1930s.
What Lind proved by accident: food carries specific things your body cannot build for itself, and leaving one out has specific effects. Those sailors were not weak. They were missing a molecule.

Lind’s sailors were at sea for months with no fresh food at all. On land, one orange, a handful of strawberries, a bell pepper, a potato, or a cup of broccoli would each have solved the entire problem — which is why almost nobody runs into this anymore. Ordinary mixed meals have been doing the job for every human who ever lived. No pills or powders required.

Fat spent about forty years being badly misunderstood. A salad with a little olive oil actually delivers more of its own vitamins than the same salad with none, because A, D, E and K cannot be absorbed without some fat in the meal.

Vitamins and minerals are strange: you need almost none of them by weight, and they contain zero energy. They are the tools, not the lumber. Here are four of them caught in the act.

Two and a half centuries later, vitamin C is also the answer to Lind’s puzzle: no collagen means old healed wounds come apart — exactly what those sailors were experiencing.
🌈Why Variety Beats Perfection
This is the part that makes the whole subject simpler than people pretend. There is no perfect food. Every single one has a column of the chart left blank — and people have genuinely looked.

Even the foods marketed as “superfoods” are just ordinary foods with one column filled in well. Eating a range of colours works for a real reason: the pigments that make a carrot orange, a blueberry blue and a leaf green are different compounds doing different jobs.
“Some foods are good and some foods are bad.” That is not what any of this says. Foods are not moral tests and eating is not a scoreboard — a doughnut is not a crime any more than a carrot is a virtue. Food is materials, energy, and enjoyment. The useful question is never “is this allowed?” but “what is in it, and what else did I eat this week?

🏥Hospital kitchens & dietitiansIn a hospital, food is part of the treatment. Registered dietitians build menus around what one particular patient can chew, swallow, absorb and tolerate — the clearest proof that nutrition is a real, individual, professional science and not one rule for everyone.

Your part is small — eat a mix of things across the week, include all three crews, notice how meals make you feel, and enjoy it. Bodies come in every shape and size and every one of them is worth feeding well.
