A recipe is not a test you can fail. It is a message from somebody who already made this once, written down so you would not have to work it out alone. Read it all, set it all out, then cook — and let the thermometer, not the colour, tell you when it is done.
🧺Read It All Before You Touch Anything
Here is how it falls apart the first time: step four asks for softened butter and yours is a cold brick, then step six wants a hot oven that is stone cold. By the end you are chasing the recipe instead of following it. That is not being bad at cooking. That is skipping the one instruction nobody wrote down.
Mise en place is French for “put in place,” and it is the single biggest difference between a calm kitchen and a frantic one. It looks fussy. It is the opposite of fussy — every decision got made earlier, when there was time to make it, so the cook has nothing left to do but cook.

📏Two Cups That Are Not Interchangeable
Dry cups and liquid cups look like the same tool and are not. You cannot level off a liquid, and you cannot see through a metal cup — that is the whole reason there are two.
Baking is chemistry with a nice smell — a cake rises because a reaction happens at the right ratios, so the amounts are not suggestions. A soup is far more forgiving. Knowing which one you are doing tells you how carefully to measure.

Your recipe serves four and eight people are coming. Scaling means every single line gets multiplied by the same number — and three memorised conversions turn the awkward halvings into exact answers you can actually measure.
The rule that saves you: every ingredient gets the same treatment. Double the flour and forget to double the baking powder and you have not made a bigger cake — you have made a different and worse recipe.

The whole problem with food safety is that the thing you are defending against is invisible. Food carrying enough bacteria to make somebody sick usually looks, smells and tastes completely normal — which is why the system is built out of habits and a thermometer, never out of a glance at the food.
Two more that surprise people. Do not wash raw chicken — rinsing it does not remove bacteria, it just sprays raw-chicken water around your sink. And thaw in the fridge or under cold running water, never on the counter, because the outside of that chicken spends the whole afternoon in the danger zone while the middle is still frozen.

These are the two parts of the kitchen you learn standing next to a grown-up, and you keep doing it that way until they say you are ready — which they will, because they want you to be.
Fighting a fire is never the kid’s job. Leaving is. Two more knife rules while you are here: a sharp knife is safer than a dull one, because a dull blade needs more force and skids — and if a knife ever slips off the counter, jump back and let it land. Never catch a falling knife.

And at sea level water boils at 212°F (100°C) and then refuses to get hotter however high you crank the burner, which is why a hard boil cooks pasta no faster than a gentle one. It just makes steam.

👩🍳Restaurant kitchens & school cafeteriasDuring a dinner rush a line cook may have eight orders going at once, and none of them get chopped or measured in the moment — every station was set up hours earlier with prepped components in labelled containers. Alongside that runs a temperature log: fridge readings, cooking temperatures, the time hot food went into the warmer. Health inspectors read those logs, and a cafeteria feeding six hundred children lives by them. Same habits as this chart, just written down and signed.
🚚Disaster kitchens & food banksWhen a hurricane knocks out power for a whole county, volunteer kitchens serve tens of thousands of meals a day out of tents and truck trailers. The hardest part is almost never the cooking — it is the cold chain, the unbroken run of refrigeration from donated pallet to plate. Crews check temperatures at every handoff, because the people they are feeding are already having the worst week of their lives. Chill is the least glamorous of the four steps and the one those teams worry about most.
